A peaceful Christmas + cookie recipe
We didn’t get a ton of snow last week, but we had so much wind they couldn’t keep the roads clear, so I got my wish- a simple Christmas. We had to postpone meeting up with family and the foster families that we are connected to by raising our children’s siblings. We snuggled up, enjoyed my husband’s first day off in almost two months… and did nothing much, but it was still special!

I know we aren’t the only family that has had a rough couple of years, so I hope this Christmas you were able to see how loved you are, and blessed. And I want you to know I love & value you too! I appreciate every single person who has joined me on this journey.

And in case you want to extended the holidays a little longer, here’s a recipe my husband & I made this year:

Chocolate Candy Cane Cookies
(This is a double batch because we never make a single with 4 kids in our home!)
Preheat oven to 375 F
4 1/2 cups gluten free 1 to 1 baking flour
2 tsp baking soda
2 tsp salt
2 tsp cocoa powder
Combine these in a bowl & set aside 

2 cups of softened butter (or plant based butter alternative)
2 cups of coconut sugar (we often use less)
2 tsp pure vanilla extract
Mix together well, then add 
4 large eggs and fold in dry ingredients from first bowl.
Add in 2 cups of chocolate chips, plus 1/2 cup of crushed candy canes

Spoon onto parchment lined baking sheets, top each cookie with a pinch or more of crushed candy canes, then bake 11-13 minutes. Let cool & enjoy!

You can also make these without the peppermint oil & crushed candy canes for a great double chocolate chip cookie!
